That's for sure. Many advanced aromators have long eaten them. Essential oils give dishes a thin aroma, a new taste. I'm not talking about health benefits.
But ... in order to get true pleasure, not to spoil the dish and not harm yourself and yourthey need to know what essential oils can be placed in dishes, how to add them and how much.
Which?
The list is large enough. In order not to steam, essential oils must be selected by analogy with spices, with well -known herbs and plants, with fruits and vegetables that have long been registered in the kitchen:

Some divide essential oils into snack and sweet. I wouldn't do that. For example, orange essential oil can be successfully used when pickling meat. With the same success it is added to a sweet sauce for dessert. The same applies to the essential oils of ginger, fennel, lemon, graphrut, thyme, basil.
And we are unlikely to become rosemary essential oil in mulled wine, and add cinnamon oil to the fish. Logic should be a sense of taste. Although ... sometimes you can experiment. What if something good comes out?
It seems to me that in cooking, as in fashion, there is more freedom. Who might have thought some time ago that the bag and shoes can be of different colors, that sneakers and dress are the norm? And nothing, the people are wearing and satisfied.
The same in cooking. Creativity steers. Some culinary specialists make ice cream from bacon, snail porridge and receive Michelin stars. What are we worse? What prevents us from experimenting in our own kitchen? At least with essential oils.
Can't you spoil the porridge with oil?
Cream - yes. But not etheric. Essential oil is a highly concentrated extract of plants. When adding to food, the score is not on the eye, not on the spoons and not for grams. Only on drops. This is very, very important.
It is also important that the essential oil must first be dissolved. As you know, it does not dissolve in water. But in sour cream, kefir, yogurt, any food of vegetable oil will be dispersed as nice. Salt, honey, strong alcohol are also suitable for dissolution.
The proportions are: 1-2 drops of oil per 1-2 tablespoons of solvent. It is better not to report than to shift. So in no case we drip essential oils directly into the dish.
Application area
The same as that of ordinary spices and herbs. The main thing is not to forget to observe the dosage. Several ideas for inspiration and creative search:
• pickle meat-fish, dissolving, naturally essential oil at the base
• Add to mayonnaise mixes, to various cold sauces, to refueling for fruit salads, creams and glaze for cake and cakes. I made a simple egg salad with a sour cream additive (2 tbsp. Spoon of sour cream, h.p. A spoonful of mustard oil + 1 drop of lemon essential oil). Very exquisite in taste.
• I am especially grateful to the essential oils of honey. If you drop 3-4 drops, for example, lavender essential oil in a 250-gram jar of honey, let it brew a couple of weeks, you will get a delightful lavender honey.
• Salt flavoring. A couple of drops of selected oil for 250 g of salt. Keep in a closed bank.
• Aromatization of vinegar - 2 drops of E. Oils (for example, rosemary or basil) per 100 g of liquid.
• And of course, any already welded porridge is already possible. But only carefully. In combination with butter, vegetable oil. Or cream.
My experiment with lemon essential oil
In some Internet sources, I read that essential oils are also well added to baking. Allegedly, the people bake. And very pleased.
This information caused me bewilderment. It seems like essential oils cannot be heated. This is a flying substance. When heated, the chemical composition changes, and essential oils lose all their properties. Including aroma.
I decided to check. Maybe I'm so incredulous. Of course, I will not check the chemical composition after heating, but I can even determine the smell and taste.
I did not want to stir the cake or cupcake. But I decided to make pancakes.
Kneaded the dough. Divided into two parts. In one I added a tablespoon of sunflower oil, in the other - also a spoonful of sunflower, but with two drops of lemon essential oil.
I baked pancakes. Laid out on different plates so as not to confuse. It is necessary to tast. I tried it. I did not notice much difference - neither in taste nor in aroma. Perhaps it was just sniffing pancake aromas.
I decided to attract neighbors to the experiment. She wrapped pancakes in a towel so as not to freeze. And went to people. At first she gave the usual pancakes, then - lemon. I was interested in whether the neighbors would feel the difference and what pancakes would like more?
The neighbor said that the lemon is tastier. And the neighbor liked the usual, without frills. It is a pity that there were no more experimental. Account - 1: 1.
And yet I came to the conclusion that you should not put essential oils in pastries and in heated dishes. The sheepskin is not worth it. In any case, a negative result is also the result of my culinary experiment.
Tip for beginners
When I just started friendship with essential oils, my head was spinning around. Well this is how many of them. And I want to buy everything. And the prices are not penny. Only then I understood, having bought a couple of oils in a pharmacy and a couple of oils in The right place, what's the difference between the real essential oil and oil, made is not known from which it is not known where.
Real essential oil cannot be cheap. Once in one store I saw Neroli - 5 rubles per 10 ml. On the label, I read that it was released by some Russian office. It is good that by that time I had already figured out a little price and oils themselves, otherwise I would definitely succumb to fake.
So if you see a neroli or lavender essential oil somewhere for 5 rubles, run from this store to hell. There will be no happiness from such oil.
